There’s only one proper way of making it.
End of thread.

If you put it in the oven, then you get a crispy topping, which you don't get if you just bung it in the microwave.

WHU(Ex) is right. But also, if you make up the packet mix with water instead of milk, it saves you a bit of money.

Aren't you supposed to add the egg mixture to the boiled pasta that's hot enough to make it a sauce but not so hot that the eggs scramble. Or something like that.

The secret to a truly authentic and delicious carbonara, as any Italian knows of course, is lots of lovely cream.

I’ll allow you to swap out Guanciale as it’s hard to get hold of. Pancetta will do.
But I’ll bury any cunt who mentions cream.

Exactly Coff - you’re supposed to imagine the scrambling point of eggs. Bit mental really.

Ha Exeter
If your recipe includes bacon or Parmesan or especially cream, you are doing it wrong.
Incidentally, carbonara is okay but I would rather use the guanciale and Pecorino Romano for bucatini all'amatriciana.

I'm taking notes from Goose : No cream. OK. Now, are we to use a regular can of spaghetti or are hoops OK?

The best thing about carbonara is that it looks pretty much the same when you chuck it up as it does when you eat it.
'Ooh, Surface, I've done a lovely pasta dish for you!'
'Thanks very much. Was some nice pork chops and a bit of mash and onion gravy too much trouble, Bitch?'

Nice thread which slightly depresses me, we are "making" lunch for my father-in-law's birthday today.
My wife is going to make a saskatoon berry pie with the berries we pick this morning but he wants Chinese food from the local buffet for the actual meal.
It connects to this because I tried to make him amatriciana once, I guess.
